A redundancy policy is important and any organisation without an equal opportunities procedure could be asking for trouble, so make sure you have one of these.
Incidents of harassment and bullying seem to be on the increase so you ought to have a related policy. An internet and email policy is also considered to be essential in this day and age, especially if you are likely to be monitoring calls and /or emails. Finally you must have a policy on health and safety.
NICE-TO-HAVES Other policies are those realting to maternity/paternity rights, flexible working, alcohol and drugs, training and development.
Always aim to keep your policies brief - the longer they are, the more difficult they are to follow.
